Italian Eggplant are so versatile! A lot of recipes will tell you to salt them before cooking, but modern eggplant varieties do not have much bitterness, so you can skip that step!
STORAGE: Store eggplant in the refrigerator, ideally in the crisper drawer. They will keep for 1 week or so, but they will begin to get soft. We recommend eating them when they are firm and fresh.
