These miniature eggplant are so easy to cook. They have a creamy texture and slightly sweet flavor - very low bitterness.

STORAGE: Store eggplant in the refrigerator. They do best in the crisper drawer but it’s ok to leave them out on a shelf. They will keep for about 5 days before they start to soften. (You can still use them when they’re soft! but a firm eggplant has better flavor)
